fridge dough

FRIDGE DOUGH

1 Pkg. Yeast (abt 2-3 tsp)
1 cup cool water
2 eggs
½ cup sugar
2 tsp salt
2/3 cup shortening
1 cup Hot water
About 6-7 cups flour

1- Mix Yeast in 1 cup cold water
2- Mix eggs, sugar, salt and shortening
3- Combine ingredients of 1 and 2 and Hot Water.
4- Mix in flour until dough is no longer sticky. (Dough will not be firm, but not sticky)
Store covered in a large greased container. Dough will raise some in the fridge so be sure to allow room for growth (Use within 10 days or it will get to tasting a little ripe.)
Makes about 3 recipes worth.

A Dozen Things to do with FRIDGE DOUGH
1. Butter horn Rolls (like crescents)
2. Parker house Rolls (folded circles)
3. Scones (let rise big and fluffy before frying)
4. Bread sticks
5. Pizza (bake before adding toppings)*
6. Calzones*
7. Pigs in a Blanket.*
8. Hot pockets*
9. Cinnamon Rolls
Roll into 9x13 rectangle, spread with margarine and sprinkle with cinnamon sugar. Roll and slice. Let rise 1-2 hours till nice and fluffy.
10. Chocolate Nut Rolls
Same as Cinnamon Rolls but instead of cinnamon sugar use 1/4 c. br. Sugar, 1/4 c. chopped nuts, and 1/4 small chocolate chips.
11. Orange Rolls
Same as Cinnamon Rolls but use sugar and 1tsp. Finely shredded orange peel instead of cinnamon sugar. Also spread the following mixture on bottom of 9x13 pan.
½ c. Lt. Corn syrup, ½ c. Brown sugar, 2 TBSP. melted margarine, 1 TBSP. orange juice and 1tsp. Finely shredded orange peel. Top with rolls and let rise. Invert pan after baking.
12. Nutty Sticky Rolls
Same as Cinnamon Rolls but spread the following mixture on bottom of 9x13 pan.
½ c. Lt. Corn syrup, ½ c. Brown sugar, 2 TBSP. melted margarine, 1 TBSP water
Then sprinkle with 1/3 cup chopped pecans or walnuts before topping with rolls. Invert pan after baking.

* These do not need to rise before baking unless you want to.
(You can use with most recipes calling for Rhodes Frozen bread dough)

Christmas Dinner Recipes

Pork
4 lbs Butt Pork Roast
32oz tomato sauce
3t pressed or minced garlic
2-4 c brown sugar (depending on how sweet)
4t cumin
4c Dr Pepper
3T molasses
1/2t salt
Pepper to taste
In a crock pot add the tomato sauce, garlic, brown sugar, cumin, Dr Pepper, molasses, salt and pepper, mix well. Add the pork, cook for 12hours on low. Check the roast periodically to make sure it is getting tender. When the roast is falling apart, remove the fat. Taste a small amount with the juice to make suer it is sweet enough, if it is not add more brown sugar or molasses. Shred the rost and add it back into the crock pot. Let this cook for 10-20 minutes.

How to use cucumbers, Hungarian style

Cucumber Salad
4 cucumbers sliced paper thin (peeled or not it's up to you)
Place in a bowl with 1 tsp. of sugar and 1/2 tsp. of salt and a sliced clove of garlic.
Refrigerate at least for 30 minutes, not longer than 45.
Season with 1 tsp. rice or white vinegar.

Top with a little sour cream or buttermilk and Paprika, that's the Hungarian part, serve.

We ate this in Hungary and liked it so much we bought a cook book so we could make it at home. Beware, the more fresh garlic you add the hotter it will get.

Grandma's Bottled Salsa


5 gallon bucket tomates blanched, peeled and cut up (cook 15-20 min and dip off liquid) add 1/4 t ground cloves to tomates and stir in before dipping liquid off.


Add to tomatoes:


15 jalapenos (1/2 seeded, chopped)

8-10 onions, chopped

10 bell peppers, chopped

4 cloves fresh garlic

3 cups white vinegar

2 t cumin

2 1/2 t chili powder

2 T salt

1 t black pepper


Cook for about 1 hour, bottle and seal.


For additional thickness I add tomato paste. I also add cilantro just before bottling to add an extra bit of flavor.

Toby's Salsa


28oz petite diced tomatoes or fresh tomatoes diced

1 onion, chopped

Hot peppers, chopped (to reduce heat take out seeds)

Nature's Seasonings to taste


chop and mix all ingredients


This is my friend's mom's recipe. This is a great basic recipe that you can easily adjust for your family. I add bell peppers for their sweetness and I use additional spices such as Chili powder, Cumin and Cayenne pepper. I also use fresh garlic and cilantro to kick up the flavor a bit.
